Ingredients

  • 2 whole wheat tortillas
  • 4 eggs
  • 1 cup spinach
  • 1 avocado
  • 1/2 tsp turmeric
  • 1/2 tsp ginger
  • 1 clove garlic, minced
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion, finely chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 cup black beans, rinsed and drained
  • to taste salt and pepper

Instructions

Step 1: Heat the olive oil in a skillet over medium heat. Add the minced garlic, chopped red onion, turmeric, and ginger, and sauté for 2 minutes until fragrant.

Step 2: Beat the eggs in a bowl and pour them into the skillet. Cook, stirring frequently, until the eggs are scrambled and fully cooked, about 3-4 minutes.

Step 3: Add the spinach and cherry tomatoes to the skillet, cooking until the spinach is wilted, about 2 minutes. Season with salt and pepper to taste.
