Anti-inflammatory juice: 4 recipes, and the catch nobody prints on the bottle

The ingredients in a good anti-inflammatory juice are some of the best-scoring foods we track: leafy greens, ginger, turmeric, beets, carrots, celery. The catch is the juicer. It keeps the water, the sugar and many of the plant compounds, and throws most of the fiber in the bin.

That does not make juice useless. It means a juice should be built mostly from vegetables, not fruit, and drunk alongside food. Below: the rule, four recipes that follow it, and when you should make a smoothie instead.

Fresh beet carrot juice, green celery cucumber juice and pineapple turmeric juice with whole vegetables

The 80/20 rule

Roughly 80% vegetables, 20% fruit at most, plus a root spice. That single rule separates a juice that fits this diet from a glass of sugar water with a kale leaf in it.

80% vegetables

Celery, cucumber, kale, spinach, beets, carrots. The base and most of the volume.

Celery 2Cucumber 2Kale 1Beets 2

20% fruit, max

Half an apple, a handful of cherries, a little pineapple. For taste, not volume.

A root spice

Fresh ginger or turmeric. With turmeric, add black pepper.

4 recipes that follow the rule

A fifth, with full nutrition, is in our recipe library: green anti-inflammatory juice.

Recipe 2 · Makes 1 glass

Beet, carrot and ginger

Method: Scrub, do not peel the carrots. Beet stains: rinse the juicer right away.

Why it works: Beets and carrots both score 2. Sweeter than the green one with no fruit at all.

Recipe 4 · Makes 1 glass

Cherry, beet and lemon

Method: Pit the cherries first. Frozen cherries thawed overnight juice well.

Why it works: Cherries score 2 and bring anthocyanins. Celery and beet keep it from being straight fruit juice.

Fiber is one of the strongest anti-inflammatory parameters in the research score for diets, the Dietary Inflammatory Index. That is the whole case for the smoothie. If you own a blender and not a juicer, you are not missing out: our anti-inflammatory smoothie recipes keep everything the juicer throws away.

Buying juice instead of making it

Read the ingredient list, not the front of the bottle. A "green juice" that lists apple or pineapple juice first is a fruit juice with color added. The ones worth buying list a vegetable first (celery, cucumber, kale) and have low total sugar per bottle.

Orange juice deserves its own line. A whole orange scores 3 on our scale; the juice drops the fiber and concentrates the sugar of several oranges into one glass. Eat the orange. And "wellness shots" of ginger and turmeric are fine, but check they include black pepper, or the turmeric is mostly decoration.

On the labelVerdict
Vegetable listed first, no added sugarBuy
Apple, pear or pineapple juice listed firstIt is fruit juice; treat it as a treat
"Juice drink", "cocktail" or added sugarSkip: that is soda without the bubbles
Turmeric shot without black pepperFine, but you are absorbing little curcumin

Do not throw the pulp away

The pulp is where most of the fiber went. Putting some of it back into your food recovers part of what the juicer removed, and it costs nothing.

Vegetable pulp (carrot, beet, celery)Stir into soups, lentil stews or pasta sauce
Carrot or apple pulpMix into oatmeal, muffins or pancake batter
Green pulpAdd to veggie burgers or falafel mix
Any pulp you will not useCompost it

Two practical notes: fresh juice loses quality quickly, so drink it the day you make it, and wash produce well, since juicing uses the peel. If the cleanup puts you off, a blender gets you more fiber for less work.

Anti-inflammatory juice: common questions

Do I need an expensive juicer?

No. Centrifugal juicers are cheaper and faster; slow (masticating) juicers handle leafy greens better and yield more juice. If you do not own either, blend the same ingredients with water and strain through a nut-milk bag, or skip the straining and drink it as a smoothie.

What is the best anti-inflammatory juice?

One that is mostly vegetables: celery, cucumber, leafy greens, beets or carrots, with ginger or turmeric (plus black pepper) and at most one small fruit for taste. The green ginger juice and the beet, carrot and ginger juice above fit that rule.

Is juice or a smoothie better for inflammation?

A smoothie, in most cases. Juicing removes most of the fiber, and fiber is one of the strongest anti-inflammatory parameters in the Dietary Inflammatory Index. A smoothie keeps the whole fruit and vegetable, so the sugar arrives with its fiber.

Is orange juice anti-inflammatory?

Whole oranges score 3 on our scale. Juice is a different food: the fiber is gone and a cup carries the sugar of several oranges. Eat the orange, and if you want juice, dilute it or make a vegetable-based one.

Do juice cleanses reduce inflammation?

There is no good evidence that juice cleanses detox the body or lower inflammation; the liver and kidneys handle that. A juice-only diet also drops protein and fiber. A daily vegetable juice alongside normal meals is fine; replacing meals with it is not the point.

Is store-bought green juice OK?

Check the label. Many bottled green juices are mostly apple or pineapple juice with a little kale for color. Look for vegetables listed first and low total sugar per bottle.

When is the best time to drink juice?

With a meal rather than alone on an empty stomach, so the sugar it does contain arrives alongside protein and fiber from food.
