Ingredients

  • 1 tbsp olive oil
  • 1 medium, diced onion
  • 2 medium, diced carrots
  • 2 minced garlic cloves

  • 1 tsp turmeric
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cups spinach
  • 1 tbsp lemon juice
  • to taste salt
  • to taste black pepper

Instructions
