Ingredients

  • 1 tbsp olive oil
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 1 medium, diced carrot
  • 2 diced celery stalks
  • 1 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 2 cups, chopped kale
  • to taste salt
  • to taste black pepper

Instructions

Step 1: Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5 minutes.

Step 2: Stir in the ground turmeric and ginger, cooking for another minute until fragrant.

Step 3: Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20 minutes, or until the lentils are soft.
