Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium, diced onion
  • 2 medium, diced carrot
  • 2 diced celery stalks
  • 3 minced garlic cloves
  • 2 cans (15 oz each), rinsed and drained cannellini beans
  • 4 cups vegetable broth
  • 2 cups, chopped kale
  • 1 tbsp, minced fresh rosemary
  • to taste salt
  • to taste black pepper
  • 1/2 tsp (optional) red pepper flakes

Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
